Mint Irish Cream Chocolate Chip Cookies


Normally I don't bake on Saturday. Not because I'm not feeling the urge to bake, just that it's only Chris and me in the house and I don't want to throw baked goods away, and of course Chris and I don't need that much temptation right in front of us.

Today was an exception. Candy and Lauren donated some liquor to our house... a bottle of Bailey's Mint Irish Cream, Bailey's Caramel Irish Cream and a bottle of Patron Silver. After quality control checking the Irish Creams I jumped onto the Food Blog Search page and started looking around. I quickly found a couple of recipes and printed them to show to Chris.

One of the recipes was for Irish Cream Chocolate Chip Cookies... wow... seriously?!? Who dreams this stuff up? I didn't intend to make them tonight, but I said something about making cookies and Chris immediately jumped at the idea. "Cookies? Tonight? Yes please." The only question after that was mint or caramel and Chris chose mint.

I happened to have some swirled mint/chocolate chips leftover from Christmas so I decided to use some of those and some regular chocolate chips. The resulting cookie had a very strong mint flavor -- much stronger than I was expecting, and I'm not quite sure if it was from the chips or the Irish Cream. I do know that I didn't use many of those chips... maybe 1/3 of a cup so I'm thinking it's the Irish Cream. The cookies also have a really light texture and color to them, presumably from using cake flour. The only changes I made to the recipe was using some mint chips and using Mint Irish Cream instead of regular -- other than that, the recipe below is what I made.

Overall, a winning recipe, but not a slam-dunk, home-run, end-zone dance of a cookie (just to throw in a few sports metaphors.) good? yes. different? yes. a very cool idea? definitely. worth making at least once, and repeating with Caramel Irish Cream and caramel chips? absolutely. but I don't think I will make them just like this again but only because I'm not much of a mint fan and I have so many other recipes to try. Mint lovers and Irish Cream lovers should make them, and would likely repeat them often, but that's just not me.

Bailey's Irish Cream Chocolate Chip Cookies

1/2 c. butter1
/2 c. granulated sugar
1/2 c. brown sugar
1 egg
1 tsp. vanilla
1/2 c. Bailey's original Irish cream
2 1/4 c. cake flour
1/2 tsp. baking soda
1/2 tsp. salt
1 (6 oz.) pkg. semi-sweet chocolate chips
3/4 c. coconut
1/2 c. chopped pecans

Cream butter, sugars and egg until fluffy. Add vanilla and Bailey's Irish cream. Mix dry ingredients and blend into creamed mixture. Add coconut, nuts and chips. Drop onto ungreased baking sheets. Bake at 375 degrees for 8-10 minutes. Cool.

hahahaha these look great... These woulda made a good st. patrick's day delight, what with the green and all...

and yes, I'm making myself look at them. Since you've mentioned temptation, might as well offer the observation that the only way to defeat temptation is to stare it down in the face.=P

probably overkill with the bailey's mint and the mint-choco chips. sounds like a st. patty's day specialty, as bjs suggests :)

i like mint, but i can't imagine eating more than two of these, which is probably a good thing. sigh....

these were yummy! i almost went and stole cc and lbm's cookies, too, but figured the bailey was theirs and that'd be mean. i like minty chocolate. despite my non-chocolateness, i always make an exception for mint. :)
