Bourbon Chocolate Chip Pecan Cookies


It's probably pretty clear by now that I like cookies... a lot. And my favorite kind of cookie is the chocolate chip cookie in all of it's endless variations. So it took me about two hours to make these cookies after finding a reference to this recipe that includes bourbon (one of my favorite sipping liquors anyway) on Cookie Madness -- and the only reason it took that long was I wanted to take nap first. :)

Some chocolate chip cookies can be pretty disappointing -- the Irish Cream Chocolate Chip Cookies come to mind -- not bad per se, just not what I really wanted, although I blame that more on the mint than the Irish Cream. I was afraid the bourbon cookies would spread too much in the oven since the dough was pretty thin, but they actually baked perfectly. As for flavor, every time I have bitten into one I have said out loud -- "that's a good chocolate chip cookie". All the flavors and textures you want from a good chocolate chip cookie, with a faint background of bourbon laced throughout it all. yum.

Ingredients:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
1/2 cup white sugar
1 cup packed brown sugar
2 eggs
5 tablespoons Kentucky bourbon
1 1/2 cups chopped pecans
1 1/2 cups semisweet chocolate chips

Preheat the oven to 350 degrees F

In a medium bowl, stir together the flour, baking soda and salt with a fork. Set aside.


Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the bourbon. Stir in the flour mixture just until blended. Fold in pecans and chocolate chips. Drop by large spoonfuls onto ungreased baking sheets.


Bake in the preheated oven until the edges are lightly browned, about 10 minutes. Cool on the cookie sheet for a minute, then remove to wire racks to cool completely.

Hey, glad you tried these! I still wish the cookies had more Bourbon flavor, but they were good.
